Usually I'll use about 2-3 cups
Then let it simmer, heat nearing to one
Stir till reduced by a third, almost done
 
Then get your parm, juice and the zest
And don't you forget an eighth of nutmeg
Keep it warm, yet don't touch et
Meanwhile get a lorge pot of water, salted
 
Let it boil, then put the penne pasta in the pot
What's the goal? Al dente then drain, but not all
Reserve one fourth water then add to the sauce
The penne and water yet the cooking doesn't stop
 
Wait 5 minutes
Then plate it, delicious
